Bromelain is an enzyme that breaks down tissue.
The action stops only when heated and, therefore, Fajita Marinade and Seasoning must always be used prior to cooking; do not add to cooked meats.
If the tenderizer is left on meat too long before cooking, meats will become mushy. Freezing will not completely stop the enzyme action and, therefore, adding Fajita Marinade and Seasoning, freezing, then cooking is not recommended.
Fajita Marinade and Seasoning is a blend of salt, monosodium glutamate (flavor enhancer), onion, black pepper, garlic, spice, and bromelain (tenderizer).
